You should definitely get some quotes before you go pick up your bike. I am not sure what bike you are getting or how old you are, but some bikes will take a big chunk out of your wallet to insure (like $2,000 or more per year).
Dealerships will require you to show proof of insurance if you are going to finance the bike. If you are going to buy it with cash, then they don't care. If you wreck it or get pulled over, it is your responsibility.
Depending on the state, you usually have 30 days to insure the vehicle (or bike)after you purchase it. However, if you wreck it or cause damage to someone else and you dont have insurance during those 30 days, you are screwed and they can sue you.

I would get some quotes to set up a policy, and while you are at the dealership (or as soon as you get home) activate the policy that is right for you.
