Time to find another insurance company. While insurance companies want to list all operators on an auto policy, why they insist on adding a spouse who is not properly licensed to drive that class of vehicle is a bit odd. If they are not willing to exclude her from the policy then go elsewhere as they are not worth dealing with.

The fact that you are still paying off your bike is irrelevant. If you negligently injure someone, you are legally liable. So you need liability insurance. If you are stopped by the police you will need to show evidence of insurance.

You are most likely going to have to sue her in small claims court for damages. Get pictures. Pictures of her car, pictures of damage on her car, pictures of the corner, the bump, etc.
